Marinated Bean Salad

Recipe from Karen Gambrell

Ingredients:

  • 3/4 pound green beans
  • 1 cup shelled edamame
  • 1 can kidney beans
  • 1 can navy beans
  • 2 green onions
  • 1 Tbsp. chopped basil
  • Diced Tomatoes

Dressing

  • 1 Tbsp rice vinegar
  • 1 Tbsp fresh lime juice
  • 1 tsp honey
  • 1 tsp brown or Dijon mustard
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Cut green beans into thirds. In large pot bring about 1" water to a boil. Add the green beans and edamame, cover and steam until tender about 5 minutes. Drain and rinse with cold water.
  2. Combine edamame, green beans, kidney beans, navy beans, chopped onions, tomatoes and basil.
  3. Whisk together dressing ingredients.
  4. Pour dressing over bean mixture and add salt and pepper.
  5. Serve chilled.
